TENDLIN CALDINHO

Caldinho is a mildly spicy, traditional Goan curry cooked with fish or vegetables. This is the recipe for the preparation of Tendlin Caldinho.
INGREDIENTS:
25/30 Tendlins (neatly pealed)
2 Coconuts
1/2 tsp poppy seeds
1 tsp dry coriander
2 big onions
1 big tomato
1/2 tsp cumin seeds
2” (inch) cinnamon
2 Cloves
1 tbls turmeric powder
3 green chilies
6 pod garlic
2” ginger
8 peppercorns

METHOD:
Grind the above ingredients with water, Take out the thick juice and keep aside, Grind again by adding a little more water and take out thin juice. Sauté 2 big onions and add diced tomato, add the thin juice and cook for awhile till it starts thickening, then add the tendlins and cook till the tendlins are well done, Lastly add 50grms of tamarind juice, 4 green halved chilies, A dash of sugar and salt as required, Finally add the thick juice and let it simmer till it reaches to the perfect consistency.
Do not over cook, after adding the thick juice; it tends to change the color of the final product.
